In 1999, while seeking ways to improve meat taste, Ells visited Concentrated Animal Feeding Operations and found them 'horrific.' This led to Chipotle's 'Food with Integrity' mission statement in 2001, emphasizing naturally raised meat, organic produce, and dairy without added hormones. Chipotle pioneered fast-casual dining with a focus on quality ingredients.
